How is this different from media monitoring?

Media monitoring tells you what was published. Proofsource tells you what AI engines say when someone asks about you, and which of those publications they used to say it.

Can you make an engine stop saying something wrong?

No one can edit an engine's answer directly. What works is correcting the sources it quotes and making your own pages state the facts plainly. Proofsource shows which sources to fix and checks whether the answer changed.
